Ingredients
  

  • 1 cup cottage cheese
  • 2 cups spinach chopped
  • 4 large eggs
  • 1 cup shredded cheddar cheese separated into two portions
  • 1 small onion finely diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick spray for the baking dish

Method
 

  1. Heat the oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
  2. Warm a skillet over medium heat, then cook the diced onion for about 5 minutes, stirring occasionally, until tender and translucent.
