Ingredients
  

  • 1.5 pounds 700g boneless, skinless chicken breasts or thighs, cubed

  • 3 tablespoons fresh lemon juice

  • 3 cloves garlic minced

  • 1 tablespoon honey
  • Balances acidity and helps caramelize.
  • 1 teaspoon dried oregano
  • Provides Mediterranean warmth.
  • 1 teaspoon smoked paprika
  • Adds subtle smokiness.
  • ½ teaspoon black pepper
  • Brings gentle heat.
  • 1 teaspoon salt
  • Enhances overall flavor.
  • 1 red bell pepper chopped
  • Adds sweetness and color.
  • 1 red onion cut into chunks
  • Caramelizes beautifully on the grill.
  • Wooden or metal skewers
  • If using wooden soak in water for 30 minutes.

Method
 

  1. Prepare the marinade.
  2. In a large bowl, whisk olive oil, lemon juice, garlic, honey, oregano, paprika, salt, and pepper.
  3. Marinate the chicken.
  4. Add cubed chicken and toss well. Cover and refrigerate for at least 1 hour, ideally 3–4 hours.
  5. Do not marinate longer than 12 hours, or the texture may change.
  6. Preheat the grill.
  7. Heat to medium-high (around 400°F / 200°C). Oil the grates lightly.
  8. Assemble skewers.
  9. Thread chicken, bell pepper, and onion alternately onto skewers.
  10. Grill the skewers.
  11. Cook 10–14 minutes total, turning every 3–4 minutes.
  12. Do not overcook — internal temperature should reach 165°F (74°C).
  13. Rest before serving.
  14. Transfer to a plate and let rest for 5 minutes to keep juices inside.
